Vegan Matcha Vanilla Chia Pudding

Despite being tiny, chia seeds are an amazingly nutritious superfood. They are packed full of rich antioxidants, Omega-3 fatty acids and essential minerals. When mixed with matcha, they make one of the healthiest tag teams around, providing great health benefits and taste.

Carolena is an university student in Sydney who loves to create healthy and easy recipes to fuel her ambitions as an athlete, which she shares on her Instagram.

She uses Kenko Matcha in her afternoon cup of tea or latte, and loves to have it for breakfast too. This matcha chia pudding is one of her most used quick breakfasts.

Super easy to make and absolutely delicious, the quickie brekkie will fuel you up fast for a productive and energetic morning.

Matcha Green Tea + Vanilla Chia Pudding

Ingredients

Vanilla Chia

• 1 ⅓ cup almond milk or milk of choice
• ⅓ cup chia seeds

Matcha Chia

• 1 ⅓ cup milk of choice
• ⅓ cup chia seeds
• 1 tsp Kenko Tea Matcha Powder

Method

1. Mix almond milk with chia seeds to make vanilla chia
2. Mix chia, milk and Kenko Tea Green Tea powder to make matcha chia
3. Refrigerate for at least 3 hours before serving (Chia needs time to soak the liquid)
4. Layered vanilla chia at the bottom and matcha chia on top
5. Garnish with cherries, blueberries and raspberries.

There you have it - a super healthy and easy breakfast, perfect for a busy day.
