Vegan Matcha Coco Lime Tart
1 cup raw almonds
1 cup soaked dates
1/2 fresh coconut
1 tbsp coconut oil
1 pinch of salt
2 cups soaked cashews
1/3 cup lime juice
1/3 cup maple syrup
1/3 cup coconut oil
Matcha powder (adjust the amount to your preference)
1 tsp vanilla extract
Process crust ingredients in a food processor until they stick together well
Press the mixture into pie pan for base
Refrigerate the crust for 20 minutes
Blend filling ingredients in a blender until smooth and creamy
Adjust the amount of lime juice and matcha powder to your preference
Pour the filling over the crust
Freeze for at least 2 hrs to set, & let stand 10 minutes before serving
Garnish with lime zest and shredded coconut.
