Monday is here so let’s start the week positively with a delicious matcha recipe - Matcha Oat Pancakes created by the brilliant Katelyn Gray from@strawberryseeds.

These amazing Matcha Oat Flour Pancakes can be made in both non-vegan or vegan versions. Either way, they are still delicious and healthy, served with almond butter, diced apples and chia seeds.
This green tea oat pancake recipe is healthy, balanced and sugar-free. It’s also very quick and easy to make - perfect for a busy morning.
Matcha Oat Pancakes with Almond Butter & Apple
Ingredients:
- ⅓ cup oat flour
- ⅓ cup of almond milk
- ½ tsp baking powder
- 1 tsp Kenko matcha green tea powder

1 egg white*
- Stevia for sweetening
*For VEGAN alternative: Use ½ mashed banana or 1 chia/flax egg (P/s: they're a little harder to flip but still taste amazing!)
Method:
- Mix together all the ingredients into batter
- Add more or less milk depending on your preference of consistency
- Cook in the fry pan with a spray of coconut oil until light and golden
- Serve with almond butter, diced apples, and chia seeds or whatever tickles your fancy
