Ai’s Matcha Green Tea Shortbread Cookies will bring a big smile to your face. The green tea flavor brings a fresh new taste to a traditional dish that’s perfect for sharing with family and friends.

Matcha Shortbread Cookies Recipe
(Adapted from Martha Stewart)
Ingredient
- 225g unsalted butter at room temperature
- ½ cup confectioners or icing sugar
- 2 cups all purpose plain flour
- ½ tsp salt
- 3 tbsp Kenko Culinary Grade matcha powder
Method
- Preheat oven to 180°C and line a baking sheet with parchment paper.
- Sift together the flour, salt and matcha powder then set aside
- Cream up butter and icing sugar for apprx 4-5 minutes until light, pale and fluffy
- Add in flour, salt and matcha powder mixture
- Combine everything on low speed
- Continue to mix with hand until a soft dough is formed
- Transfer and roll dough out to 1/4 inch thick on a parchment paper or cling wrap
- Refrigerate dough for 25-30 minutes until firm so it will be easier to handle
- Cut cookies using a Christmas tree cookie cutter (or any other shapes)
- Place them on a lined baking sheet about 1 cm apart
- Bake for 7 minutes or until edges are golden brown
- Cool on pan for 2-3 minutes then transfer to wire rack to cool completely.
