Amy’s Matcha Cheesecake recipe is low in fat and high in protein. Even though we’ll be using low-fat cheese and yogurt for the cheesecake, it will still turn out creamy and delicious. Plus, the base is vegan and sugar-free, which makes it much healthier than regular cheesecake.
The only regret you’ll have is when you finish the last mouthful!
Matcha Swirl Protein Cheesecake
Ingredients
Base
- 1 tbsp sugar free maple syrup
- 3 tbsp tahini (or nut butter of choice)
- ¼ cup oat flour (rolled oats ground up)
- ¼ cup coconut flour
- ¼ cup almond milk
Cheesecake
- 1 tbsp matcha powder
- 400g low-fat greek yogurt (I use Chobani)
- ¼ cup low-fat mascarpone OR ricotta cheese
- ¼ cup vanilla whey protein powder
- ½ cup egg whites
-
Optional: 3 tbsp powdered xylitol (if your protein powder isn’t sweet enough)
Method
- Mix all the base ingredients together in a bowl until having doughy mix
- Press the doughy mix down into a small nonstick springform pan
- Blend together all your cheesecake ingredients until smooth
- Pour ¾ cheesecake mix on top of the base
- Blend the remaining mix with matcha powder
- Pour matcha mix in a zigzag motion on top of the white cheesecake mix & Swirl with a skewer.
- Bake at 160 C / 320 F for about 35-40 minutes (DON'T over bake the cheesecake)
- Remove from oven while it’s still wobbly & uncooked in the centre (You want to do this to prevent burning)
- Let it set as it cools to become nice and creamy
- Top with matcha sweets (e.g matcha kitkat, matcha oreos, or matcha chocolate) - You can afford it as the cheesecake is very low fat and high in protein :)
Tasty and healthy – what a combination! We hope you enjoy this delicious matcha dessert.
