Green Tea Matcha Fruit Cake recipe with green tea fluffy light cake coated with creamy luscious matcha cream and topped with mixed fresh fruits, kiwi, strawberries, blueberries, mangos and cheries

Another week is here and we’re starting it right with a new matcha recipe you’ll absolutely love. The key to this cake recipe is the colorful decorations created from the mixed fresh fruits that makes the result so gorgeous to both look at and to eat.

Our recipe for this week is calledMatcha Green Tea Fruit Cake, made and shared by Vivianne Wakuda, aka @viwakuda.

Vivianne is a professional chef who specializes in confectionery in Yogashi style-Western techniques in Brazil, using Asian ingredients. Vivianne has been a chef since graduating from culinary school in Japan in 2008, and loves creating beautiful desserts incorporated with fresh fruits and Asian ingredients, especially matcha, sesame, yuzu and miso.

Vivianne’s Matcha Fruit Cake is doubled up with matcha, creating a soft, light matcha cake coated in rich luscious matcha cream. Topped with different types of fresh fruits arranged neatly, a colorful and delicious cake awaits.

Matcha Green Tea Fruit Cake

Matcha cream

  • 500ml milk
  • 1 egg
  • 130g sugar
  • 55g starch
  • 5g matcha
Instruction
  1. Boil milk in a stainless steel pot
  2. In another bowl, mix all the remaining ingredients.
  3. Pour the milk into the mixture, mix for 5 mins and let it cool
  4. Once it’s cool, whisk with a hand mixer until smooth and creamy.

Matcha cake

  • 4 eggs, separated
  • 170g sugar
  • 135g flour, sifted
  • 45g butter, soft
  • 11g honey
  • 5g matcha
  • Mixed fresh cut-up fruits, berries, mangos, kiwis, and guavas
  • Whipped cream
Instruction
  1. Whisk egg yolk with half of the sugar for about 10 mins, then mix in honey.
  2. Whisk the egg white and the rest of the sugar till soft peak.
  3. Fold gently the egg white mixture and egg yolk mixture.
  4. Mix in flour, matcha and butter until combined.
  5. Bake for 30 mins at 175 degrees Celsius.
  6. Let it cool and slice in 3 parts
  7. Spread between each slice, then coat the whole cake with matcha cream
  8. Decorate with whipped cream and mixed fresh fruits.

the matcha is a realy nice product. we us it almost daily. the order process is fine and deliver is good.one issue would be your associatation with SHOP i do not like this company as well as other third party companys that want to save your credit info.

NO CONTACT

I saw you sell on Amazon for less money. I tried to contact you and the e-mail was invalid. I tried e-mailing for days and the response was always the same.....invalid e-mail. does not exist. The only contact number on your website was Australia. Then I see this matcha was shipped from an Amazon facility in Kentucky - but I did not get the Amazon price! ???. I tried to file a claim with my financial institution - what a headache. I can’t rate a product that has no customer service contact. So frustrating!

I have had better matcha expected a mind blowing yummy & mind focus matcha, not so much ⭐️one star only

Ceremonial grand and the organic .

I have had a sweeter more matcha flavor in other matcha so that just tells me not all matcha are equal I give it 2 stars. I really want to love it but not as good as PIQUE brand
