We love pasta, we love pesto and we love matcha. Put them all together and you get a classic Italian dish with a Japanese twist that’s perfect for lunch or dinner.
Anyways, that’s enough of my talking. Let’s start cooking!
Vegan Matcha Pesto Pasta
Ingredients
½ cup walnuts
⅓ cup pine nuts
1 cup basil leaves
½ cup spinach leaves
2 tbsp lemon juice
Pinch of pink salt
2 tsp matcha powder
Garlic, Olive oil, avocado
Your choice of pasta: Penne, Spaghetti, etc.
Method
Blend all ingredients, except the last two, until combined
Add water if needed to blend more thoroughly
Spice up the flavor for the pesto with garlic, olive oil and/or avocado
Boil the pasta until cooked
Toss pasta with the pesto sauce
Add some salt if needed
Garnish with chopped spinach or your choice of topping
