Now, this Matcha Banana Bread is egg-free and dairy-free, but still has that dense, moist and spongy consistency we love baked goods to have.
Topped with coconut flakes and filled with banana and matcha flavours, this delicious treat can be served for breakfast, lunch or as a snack at anytime of the day.
So, let’s get started!
Matcha Green Tea Coconut Banana Bread
Ingredients
1 cup plain flour
½ cup buckwheat flour
1 tsp Kenko green tea powder
1 tsp baking powder
1 large ripe banana
2 tbsp brown rice malt syrup
⅓ cup almond milk (or other dairy-free milk)
⅓ cup coconut flakes (more or less to suit taste)
Method
Mix plain flour, buckwheat flour, matcha, baking powder in a bowl
Smash the banana until smooth
Mix malt syrup into mashed banana until combined
Combine flour and banana mixture together
Add milk and mix thoroughly until getting a doughy batter
Mix in coconut flakes
Transfer the batter to the lined baking pan
Sprinkle some coconut flakes on top
Bake at 170 C for 30-35 minutes
Cut into slices and enjoy!
