I've seen Hunted and Gathered's Paleo Chocolate in a few health shops around Melbourne lately and been meaning to try it. I've always loved their packaging, and the chocolate tastes pretty damn good as well.
It's handmade here in Australia and is raw, vegan (I always thought the vegans and paleo crowds were staunch enemies but apparently when it comes to chocolate they have found some middle ground), gluten free and of course no added sugar - that is like kryptonite to a paleo-er.
So I finally picked a packet (I could only afford one) and decided to pair it with some matcha of course.
Due to this current heatwave, I felt a refreshing, cooling dessert was the order of the day. This is my attempt to recreate a chilled matcha, avocado and banana mousse recipe by Chris over at Tales of a Kitchen.
It is full of healthy fats from the avocado and the cashews, packed with antioxidants from the cacao and matcha, and tastes pretty good too!
Ingredients:
Mousse.
- 1 tsp matcha tea powder
- 1 avocado
- 1 frozen banana
- juice from 1/2 a lemon
- Topping-
- 30g Paleo Chocolate
- handful of cashews
- some frozen mixed berries
Method:
- Add all the mousse ingredients and blend until they are well combined, light and fluffy.
- Scoop into 2 bowls (or one big bowl if you are alone) and add your toppings.
That's it. It takes about 10 minutes - except for freezing the bananas, do that earlier. You should get 2 serves out of it but I wouldn't blame you if you ate the whole lot!
