This vegan green tea and chocolate chip banana bread is a delicious recipe that will delight even the fussiest of eaters. The bread is soft, moist and delicious with the mild sweetness of matcha green tea and chocolate.
The banana bread is made with dairy-free and unrefined sugar-free ingredients to cut down on the fat and sugar intake within your body during the holiday indulgence.
Matcha Chocolate Chip Vegan Banana Bread
Two and a half ripe bananas
⅓ cup vegan butter
½ cup unrefined cane sugar
1 tbsp rice malt syrup
1 cup spelt flour
1 tsp baking soda
1 tsp matcha powder
1 tbsp almond milk
½ cup vegan chocolate chips
Beat the bananas until smooth and creamy, before setting aside.
Beat the butter, sugar and malt syrup in another bowl until creamy.
Combine the banana with the butter mixture, using a hand mixer.
Mix in the spelt flour, baking soda, matcha and almond milk to combine.
Add the chocolate chips, mixing until incorporated.
Transfer the batter into a bread tin lined with parchment paper.
Top with some chocolate crumbs and half a slice of banana.
Bake in a preheated oven at 180oC for 40 minutes.
Allow the banana bread to cool before serving.
