These matcha mint slices have a crust of nutty almond, flaky coconut and earthly cacao, and are sweetened and held together with medjool dates and rice malt syrup. The slices are then finished off with melted chocolate and mint leaves.
These matcha chocolate mint slices not only look beautiful with the vibrant green color from matcha and fresh mint, but also taste delicious because of the delightful blend of matcha, mint and chocolate!
Matcha Chocolate Mint Slices
Ingredients
Cacao Almond Crust
1 cup almond meal
2 cup coconut shreds
½ cup cacao powder
6 pitted medjool dates
2 tbsp rice malt syrup
Matcha Mint Layer
2 cups cashews, soaked
1 cup coconut cream
2 tsp Kenko matcha
2 tbsp rice malt syrup
A handful mint leaves
Vegan chocolate, melted (garnish)
Instructions
Blend all the base ingredients until crumbly.
Press the mixture into a tray lined with baking paper and freeze.
Blend all the custard ingredients until smooth.
Spread the custard onto the base evenly, freezing for one to two hours.
Slice into even squares.
Drizzle with chocolate and sprinkle with mint leaves
