Matcha Cake with Red Bean Paste
Red Bean Paste
- 1 hour cook time | 30 mins prep time -
Ingredients
- 200 g red beans, washed & rinsed
- Water
- 50 grams sugar
Method
- Fill the pot of red beans with water up to 1 inch above the beans
- Boil on high heat, then turn to low once it boils
- Continue cooking till the beans are soft (about 1h)
- Stir frequently to prevent beans from sticking to the bottom & add more water to cover the beans
- Remove from heat and stir in sugar once the beans are soft
- Let it cool down slightly for an hour
- Blend till smooth & refrigerate overnight
Cream Cheese Frosting
Ingredients
- 250g cream cheese, room temperature
- 250g butter, room temperature
- 60g icing sugar
- 1/4 tsp vanilla extract
Method
- Whip cream cheese and butter till combined
- Add icing sugar and vanilla extract, scrape down the sides
- Continue whipping and scrapping down the sides for 2 more times
Matcha Cake (10-in W + 1-in Hl)
- 30 mins prep | 40 mins bake time -
Ingredients
- 4 eggs, separated
- 140g sugar
- 115g plain flour
- 20g corn flour
- 12g matcha powder
- 40g butter
- 70 ml milk
Method
- Whip the egg whites on high speed till light and fluffy
- Add in half the sugar, & continue whipping till combined
- Repeat with remaining sugar
- Add in egg yolks, & whip till combined
- Sift plain flour, corn flour and matcha powder in a separate bowl, & mix well
- Fold dry ingredients into the egg mixture **Do NOT overmix**
- Melt butter with milk over a bowl of hot water
- Preheat oven to 170 C
- Fold 1/4 of the butter mixture into the the batter
- Repeat with remaining butter mixture
- Bake the batter in a baking pan lined with baking paper for 30-40mins
- Let it cool before slicing into half
- Top with bean pastes & cream cheese frosting on both halves
- Stack them on top of each other & Enjoy!
