These green tea matcha banana nut muffins are healthy, dairy-free, and yummy! Combining matcha green tea, chocolate and banana flavors, with a hint of nuts, these vegan muffins are a masterpiece you can enjoy as an ideal breakfast or a healthy snack when you’re on the go.
Matcha Vegan Banana Muffins Recipe
Ingredients
1 + ¼ cup oat flour
½ tbsp baking powder
¼ cup unrefined cane sugar
2 heaped tsp Kenko Tea Matcha Green Tea powder
1 cup almond milk
1 flax egg
¼ cup brown rice malt syrup
1 medium mashed banana
Optional: vegan dark chocolate (melted)
Optional: choice of nuts (chopped)
Method
Preheat the oven to 180C
Whisk oat flour, baking powder, unrefined sugar, green tea powder, ensuring no clumps
Stir almond milk, flax egg, malt syrup together
Pour into flour mixture and combine
Mix mashed banana into the mixture
Allow to sit for 5 mins once combined
Spoon the mixture into muffin tray lined with muffin liners
Bake for 24 mins or until cooked and risen
Allow muffins to cool so the inside firm up
Garnish with melted dark choc and chopped nuts
