This recipe is a match made in heaven - ice cream and cookies! The soft, rich, and creamy matcha ice cream is complementary with nutty, soft, mildly sweet and rich chunky chocolate cookies. Matcha and chocolate always make a great couple!

This matcha ice cream chocolate chip cookie sandwich is vegan, sugar free, egg free, dairy free and super delicious, perfect for a hot summer day!

Chocolate Chip Cookies Matcha Vegan Ice Cream Sandwich

Ingredients

Cookies

• 1 cup oats
• 2 chia egg (1 tbsp chia soaked for 10-15 min)
• 5-6 dates soaked overnight
• 1 ripe banana
• Crushed almonds
• Crushed dairy free dark chocolate

Ice cream

• 1 tsp Kenko tea matcha
• 2 frozen bananas

Method

1. Mash soaked dates with a fork
2. Mix in chia egg until combined
3. Mash banana in a big bowl with a fork
4. Mix oats & dates + chia egg, with mashed banana
5. Add cacao powder, almond and chocolate
6. Mix everything until even
7. Place mixture on a tray lined with baking paper (apprx 1 tbsp = 1 cookie)
8. Bake for apprx 15 mins on 230 C
9. Cool the cookies after baking
10. Blend banana & matcha until creamy
11. Optional: Layer with strawberry on cookies
12. Scoop ice cream on 1 cookie and top with another
