Tiramisu is a well-known staple dessert in many Italian restaurants. It has an elegant combination of strong espresso blended with a mildly sweet and rich mascarpone cheese, finished with a tantalizing hint of rum or coffee liqueur.

Despite its sophisticated taste, tiramisu is easy to make, and completely oven-free! All it takes is a bowl, whisk and a little patience. Not only is the recipe simple, tiramisu is also very versatile.

You can also give a modern twist on this traditional style dessert by mixing it up with different flavors, such as strawberry, coconut, lemon and even matcha.

And today we are doing just that - we have an easy and completely oven-freeMatcha Green Tea Tiramisurecipe by Ana Mariù from @ranamaria92.

Matcha Green Tea Tiramisu is your new favorite dessert this summer. It's oven-free and super delicious!

Ana, aged 24, hails from the land of Tiramisu itself - Italy. Having lived in London for just over a year, she has been delighting her English friends with her passion for food, especially desserts. And recently she discovered a love for green tea matcha, incorporating this into her baking.

This tiramisu recipe is only her third using matcha, but she has promised there will be many more in the future. Watch out for them on Ana’s sometag or instagram.

Ana’s Matcha Tiramisu is a fusion of traditional Italian tiramisu and earthy Japanese matcha green tea. It has the delicate creaminess and smoothness of mascarpone cheese, with an added subtle hint of matcha green tea.

For this recipe, Ana used the yolks to highlight the taste of matcha and create a lighter texture for the matchamisu. You can beat the egg whites until stiff peaks form, folding it into the cream mixture to create a richer and creamier tiramisu. If you prefer mascarpone cheese, switch the ricotta cheese for 500g of mascarpone.

Green Tea Matcha Tiramisu

Ingredients

  • 300 ml hot water
  • 4 tsp matcha + 2 tsp matcha for matcha syrup
  • 3 tsp stevia + 1 tsp stevia for matcha syrup
  • 4 yolks
  • 250g mascarpone cheese
  • 250g ricotta cheese
  • 1 tsp vanilla extract
  • 1 box ladyfingers
  • White chocolate chips to garnish (optional)

Instruction

  1. Mix 2 tsp matcha + 1 tsp stevia in hot water; set aside for later use.
  2. Beat the yolks** with the mascarpone, ricotta cheese, vanilla extract, stevia and matcha.
  3. Add more stevia if desire more sweetness.
  4. Continue beat the mixture until just creamy and combined.
  5. In a big casserole pan, spread an even layer of the cream filling.
  6. Soak the ladyfingers in the prepared matcha syrup mixture.
  7. Place the ladyfingers on top of the 1st layer of cream.
  8. Spread the 2nd layer of cream on top of the ladyfingers.
  9. Repeat the step 7-8 until finishing the cream filling.
  10. Refrigerate for 2-4h to set.
  11. Dust matcha powder and white chocolate chips once served. And enjoy!

**Note:Traditional Italian tiramisu recipe uses raw egg yolk. If you prefer cooking the yolk, then beat the yolk first in a bowl set over a saucepan of barely simmering water until tripled in volume, for 5-8 mins.

A slice of heaven - Creamy and smooth Tiramisu with the delicate earthy hint of matcha green tea, creating a new level for this classic dessert.

Delizioso! Just whip, layer, and set, and you’ll have a perfectly luscious dessert to impress your friends on a warm summer day.
