Leonie’s pancakes are healthy and so easy to make. The ingredients are all plant-based and served with a yummy chocolate sauce, fresh strawberries, or any toppings your heart desires.
Vegan Strawberry Matcha Pancakes
Yield: Makes about 5 pancakes
Ingredients
- 1 banana
- 100g oats
- 220ml plant-based milk, such as soy
- 50g desiccated coconut
- 2 tsp matcha
Instructions
- Blend all the ingredients in a food processor until smooth
- Fry in a non stick pan, although depending on your pan, you might need coconut oil to ensure the mixture doesn’t stick
- Flip the pancake when bubbles begin forming on the surface
- Top the pancakes with chocolate sauce, strawberries and desiccated coconut
