This week we have another amazing guest who will share with us her vegan Matcha Pancakes recipe. Let’s meet Leonie aka@naturallyleyonee!

Leonie is a 24 year old dentistry student from Germany. She is a plant-based foodie has been living on a vegan diet for a year now. She loves to experiment in the kitchen with healthy superfoods like matcha, creating dishes that are easy to make, while also being tasty and healthy.

Leonie’s pancakes are healthy and so easy to make. The ingredients are all plant-based and served with a yummy chocolate sauce, fresh strawberries, or any toppings your heart desires.

Vegan Strawberry Matcha Pancakes

Yield: Makes about 5 pancakes


  • 1 banana
  • 100g oats
  • 220ml plant-based milk, such as soy
  • 50g desiccated coconut
  • 2 tsp matcha


  1. Blend all the ingredients in a food processor until smooth
  2. Fry in a non stick pan, although depending on your pan, you might need coconut oil to ensure the mixture doesn’t stick
  3. Flip the pancake when bubbles begin forming on the surface
  4. Top the pancakes with chocolate sauce, strawberries and desiccated coconut

First matcha purchase!

So far I have made tea cookies, raw nut/fruit balls, smoothies, and plain matcha with cashew milk and it's all good to me! Don't have much to compare it to but a chain coffee shop latte experience years ago. I learned the amazing benefits that make the cost of matcha well worth the price.

I have yet to receive my order

This review is not about the quality of the set, but based on my customer service experience. Placed my order on April 13th, got shipping notification on April 14th, and the last shipping notification I got was April 16th saying USPS was awaiting the item in Buena Vista, CA. Emailed customer service April 22nd and received a response the same day from a member of your team saying he would inform me once he receives info from usps. I also contact usps and they stated they have no information regarding the package. As of today, April 27th, I have yet to receive any information about my order. This was meant as a gift that will now be late. Was very excited to try the set and the matcha, but this experience makes me doubt if I will order from Kenko again, unfortunately. Would appreciate this problem being solved as soon as possible. Thank you.
